I would just like to state for the record that I am kind of awesome, because I successfully prepared a pretty nomtastic meal last night which, due to the allergies of a couple of the guests, could not contain grains, potato, processed sugar, fish, oranges, or corn/corn-derived products. WOO. And for a little extra challenge, my dog decided that yesterday on our morning walk was the perfect time to ROLL IN A PILE OF CRAP for the first time ever in his life, necessitating a hose-bath outside, followed by Mr. McK wrestling him into the upstairs bathtub for a more thorough bath afterward. (I would have helped, but I was in the shower at that point, having been too close to Merc when he shook himself during the hose-bath. EW.) NOT FUN FOR ANY OF US, DOG. But in the future, will he remember that sad conclusion to his adventure? Oh hell no. Oh my little puppydog. It's a good thing you're so cute.
ANYWAY, for dinner, I marinated some sirloin steaks in olive oil, red wine vinegar, soy sauce, lemon juice, garlic, shallots, and crushed coriander seeds, and then I tossed some
Roman Pepper Steak Seasoning on them, as well as some of my grandpa's awesome oregano, and broiled them. I also cooked up some mushrooms in some of the leftover marinade, and added a bit of salt and pepper and balsamic vinegar toward the end. For sides we had roasted asparagus (olive oil, salt and pepper, with some lemon juice drizzled on before serving--my favorite way to cook asparagus, SO GOOD) and a big green salad with bell peppers and tomatoes and avocado (best salad dressing ever: equal parts olive oil and white balsamic vinegar, with some chopped fresh basil and a bit of dried or fresh thyme).
For dessert, I mixed up some cream cheese with amaretto (KIND OF A LOT OF AMARETTO, in fact), vanilla, ground cloves, allspice, ground ginger, and a bit of honey, as well as some chopped pecans I had lying around, then peeled/cored/sliced-in-half some pears and put them in a pan with some butter, honey, and lemon juice, flipping them over a few times till they heated through. Then I put the (room-temperature) cream cheese in the trough in the pear halves and drizzled them with the glaze from the pan, sprinkled cinnamon and nutmeg over the top, and voila. Dessert sans processed sugar. IT WAS PRETTY GREAT, NGL, and it looked really pretty, too.
