What veg*ns eat

So, reviving this, mostly because I'm pretty proud of my creative culinary skillz!

Breakfast was two pieces of sourdough bread, topped with two Violife cheddar slices, melted, and then topped with tomatoes fried in oil with garlic.

Then I had a long swim and cycled to chambers.

On the way I stopped at the beautiful produce store near Newington Green and went a bit nuts. I bought lots of fruit (more anon), and, getting excited, two ears of corn.

So snacks through the day were a fig, a banana, two slices of pineapple, some cherries, and flat Spanish peach.

Lunch was leftover pasta puttanesca -- I make it with olives, capers, sometimes artichokes (did this time), not anchovies obviously, crumbled nori to add a bit of a taste of the sea, chilli flakes. Over linguine.

Then, cycling home, I was pretty hungry so I bought two Naked bars whilst doing dinner shopping and ate those. I had a lot of room for calories after the swimming this morning, so it was fine.

Now, dinner! I got creative.
1) I made black bean hummus. I basically used this recipe and substituted as follows:
Garlic --> garlic
Chickpeas --> black beans
Tahini --> peanut butter (no sugar or salt added)
Lemon juice --> lime juice
Olive oil --> avocado oil
Cumin --> 1/2 jalapeno, seeded and chopped
It's really good, just a little loose. Next time I won't follow the instructions to add 7 tablespoons of the liquid from the tins. I'll try without and see how it goes -- I think probably it might need a few tablespoons worth, but not 7.
2) I made quinoa and roasted up some sweet Spanish onion and stripey red and yellow bell peppers with olive oil, salt, and sugar in the oven to have with it.
3) I cooked an ear of corn.
4) I fried padron peppers and one sliced green tomato.

It's a lot of food. I'm struggling to get through it. :) But I think it's probably not actually excessive. Just bulky.

ETA: Ack, it was 657 calories according to my counter, which is basically double what I should have for dinner. I'll have to have smaller servings of the quinoa and the hummus tomorrow. I got away with it today, again, because of all the swimming.
