What veg*ns eat

It's been a while since I've done one of these, but I am so impressed with Kit's and my recent efforts over the last few days/weeks that I feel the need!

In the first place, my New Year's insistence on reverting to full veganism seems to have somehow got Kit fired up about baking. I think he's tired of our standard vegan re-treads of his standard meals and the creative energy he used to invest in packing meals with as many types of dairy as he could has to go somewhere else instead.

He's had a few goes at banana bread, which have all been passable but not out-of-this-world. He's done this chocolate fudge-cake twice. The first time it came out a bit lopsided but was still delicious. The second time, for Easter, it basically looked exactly like the picture with the recipe. Unbelievably decadent (I think he uses rather more cocoa and dark chocolate than is called for. He tends to do things like that with recipes).

Then, this past weekend, because he had some carrots leftover from a shepherd's pie we'd made the previous week, he suddenly got a notion to make carrot cake! I'm almost certain it was this recipe he used. My contribution was to grate the carrots. ;)

Inspired, I decided I would try to cook this week and take lunches in to work rather than buy them.

Monday night I picked up some olive bread on a whim from the supermarket on the way home, and decided to ease into things a bit lazily. Olive bread, hummus, and shepherd's salad (tomato, cucumber, onion, and pepper, dressed with lemon juice and apple vinegar) was my fairly simple supper (with a small slice of carrot cake for dessert, mind!), and I've had leftovers of the same for lunch yesterday and today.

Yesterday I made a big vegetable soup. I'm still a bit lazy with soup, I use vegetable stock cubes or powder and a mix, either this or something similar, as a base. Then I threw in new potatoes, carrots, onions, and some sundried tomatoes and dried mushrooms (shiitake, IIRC) that I found lurking in the cupboard. I was racking my brains for what I could have alongside a soup to bulk it up, and somehow the inspiration came to me to make rice pudding. A vegan rice pudding recipe was an easy Google away (I made it with some blended almond/coconut milk that I found at a health food store). So last night and tonight I've had a nice big bowl of very hearty soup followed by a plate half of rice pudding, half of carrot cake.

The carrot cake is finished now. :( The soup and rice pudding are not! :)))

I noticed when I was cleaning out the fridge on Monday that I've got half a jar of vegan pesto in there. So maybe pasta tomorrow night...
