Hi bakers! I experimented for the first time today with making pizza dough in the bread machine, and would love to hear from y'all about your favorite pizza dough recipes. Here is what I made today, from The Ultimate Bread Machine Cookbook, page 111:
Sicilian Sfincione (dough recipe only)
7/8 cup water
2 tablespoons extra virgin olive oil
3 cups unbleached white bread flour
1 1/2 teaspoon salt
1/2 teaspoon granulated sugar
1 teaspoon rapid-rise active dry yeast
Put ingredients in bread machine according to manufacturer instructions. Select dough cycle. When dough is completed, separate into four equal pieces. Form each piece into a 6-7 inch round. Place on a baking sheet, cover with plastic wrap & let rise for 10 minutes. Brush with olive oil & top with the toppings of your choice. (I topped one with salt & rosemary, two with garlic powder & Parmesan, one with Parmesan & mozzarella.) Bake at 425 degrees F near the top of the oven for 15 - 20 minutes.
(The cookbook has a different topping suggestion, with chopped tomatoes, garlic, onions, olives, etc., but we were going for something simpler.)
They turned out pretty yummy, although they were a little harder than I would have liked. I think next time I'll roll the dough balls in more olive oil and cook them for slightly less time.
