This is similar to commercial honey-wheatberry bread. I adapted it from The Laurel's Kitchen Bread Book so that it can be made in my
Cuisinart bread machine.
Makes 1 1lb loaf
Ingredients
-1/2 cup + 2 Tbs water
-1/2 cup + 2 Tbs bulgur
-1 Tbs molasses
-1/2 cup + 2 Tbs buttermilk, room temperature
-1 Tbs butter, room temperature, cut into 1/4" pieces
-1 Tbs honey
-1 1/4 tsp salt
-2 cups whole wheat flour
-2 tsp vital wheat gluten
-1 tsp active dry yeast
Directions
1. Bring the water to a boil. Add molasses and bulgur. Stir, bring to a boil, then cover and take off heat. Allow to cool while measuring the other ingredients.
2. Add all other ingredients, besides the yeast, to the bread machine in that order, or the order specified by your bread machine.
3. Add the bulgur, and then the yeast.
4. Bake on wheat cycle, small (1 lb) loaf, light crust.
