Duck with a twist

So the moment supreme was there, making duckbreast for the first time. Next is gonna sound like a contradiction, but it's not. The diner was great but the cooking failed.

Let's start with the crispy curly potatoes. I tried several things but couldn't get the potatoes curly, so I decided to make small spheres out of them. I seasoned them with a good layer of salt (since the rest of the meal didn't have too much salt in it) and fried them in sunflower oil. They tasted great, nice crispy and salty exactly like I wanted except for the form.

The carrot mush was great as well, but not the way I imagined it. I boiled the carrots, fried a bit of onion and blended the total with some lemon juice. My idea was to create a fresh carrot mush with citrus flavours however it ended up that the onions were too strong in taste. The total tasted great, but not the way I wanted. Still I'm happy with the end result and next time I will leave out the onions and I think I'll get the flavour I want.

Last but not least the duck. The duck was nice, but not great. It was slightly overcooked and the marinade wasn't as strong as I hoped. Also the cooking of the duck didn't go exactly as planned since the fat from the duck slided to the side of the pan instead of staying in the middle, which resulted in the fat of the duck being cooked black. But that doesn't matter too much, since you're not supposed to eat that part. Still for the first time cooking duckbreast I'm very satisfied. Next time I'll make a honey-mustard sauce instead of marinade and then it will taste as I imagined I think.

So to sum things up, the tastes were great and I really learned a lot and ate great but not it were not the flavours I planned.
