Easy Tasty Fruit Dip
2 cups plain nonfat yogurt (Greek yogurt works well, too)
1/2 c. honey
1 tsp cinnamon
- combine all ingredients in a medium bowl. Chill and serve with assorted fruits for dipping
Blueberry Lemon Trifle/Parfait Surprise
4 packages instant lemon pudding mix
2 containers fat free Cool Whip
1 cup cold milk
1 container fat free plain yogurt
1 package Reduced Fat Nilla wafers
1 pint blueberries
1/3 cup of sugar
2 teaspoons of water
-In a small saucepan over moderate heat, heat blueberries, water and sugar until sugar dissolves and blueberries begin to release their juices--3-6 minutes (stir gently, occaisionally). Transfer to a small bowl and cool in the fridge.
-Cover the bottom of a trifle bowl or other large, deep bowl with Nilla wafers (crush some in a baggie to fill the spaces in between the cookies)
-In a medium bowl, combine 2 packages lemon pudding with 1/2 container of Cool Whip and one container of yogurt. Mix well--pudding mixture will be electric yellow and THICK
-Spread thick lemon pudding mixture over Nilla wafers
-Spread blueberries over lemon pudding mixture in an even layer. Reserve 1-2 tablespoons of blueberries
-Combine the 2 other packages of lemon pudding with the other half of the Cool Whip and 1 cup of milk in a medium bowl (same one you used before is OK). Mix well--mixture won't be as thick or as bright as previous version)
-Spread pudding mixture on top of blueberries.
-Crush two substantial handfuls of Nilla wafers in a baggie. Sprinkle them on top of top lemon layer.
-Spread Cool Whip over crushed wafers to desired thickness. Top with reserved blueberries. Chill 1-2 hours before serving (can be made in advance, add blueberry topping before serving)
