Ever since this major chapter in my life for the past couple of months, I realised I have changed. I am suddenly interested in groceries shopping and cooking! Gosh...

Anyway, having always been a fan of bergedil, a malay style fried mash potato cake, I tried to make them at home. Below is the recipe for it, gotten from my malay friend.

Ingredients (for 6 pieces):

6 large potatoes, to be peeled and sliced thickly (1 large potato makes 1 bergerdil)
1 tsp of ready make fried shallot (can be bought from supermarket in a plastic cup container)
1 stalk of spring onion to be finely chopped
1 big red chilli to be finely chopped
0.5 tsp of salt
sufficient oil for deep frying
1 egg to be lightly beaten
0.5 tsp of ground pepper

Instructions:

Heat oil in a wok and deep-fry the potato slices until golden. Some people prefer to boil them, but my malay friend says the final product tastes better if it was deep-fried beforehand.

Drain on absorbent paper and set aside to cool down. Then pound and mash them into a paste (this is real hard work, even with the help of a potato masher).

Mix together the potato paste, fried shallot, spring onion, chilli, salt and ground pepper (don't add in the beaten egg!). Form dough into the size of an egg and flatten it a bit. Dip in beaten egg and deep-fry until slightly brownish in colour. Drain on absorbent paper before serving.

And did I mentioned my first try is an absolute success?! It just taste like those sold by the malay stores outside! But given the hard work, I rather pay 50cents for it from these outside stores...haha...
