Recipe: Tzatziki

Tzatziki (from Greece)

1 large cucumber
2 cups strained yogurt
3 cloves of minced garlic
2 tablespoons virgin olive oil
1-2 teaspoons fresh lemon juice
2-3 teaspoons fresh dill
Salt and freshly-ground pepper to taste

~ After removing the seedy parts, cut cucumber into small pieces, sprinkle with salt and let stand for at least 15 minutes. Drain the water.

~ Combine cucumber, strained yogurt, minced garlic, virgin olive oil, fresh lemon juice, and dill. How to strain: http://www.lerios.org/recipes/straining.php

~ Add salt and pepper to taste & refrigerate for 2-3 hours.
