Eve's Tom Yam Clam Recipe

Ingredients:
Clams
Ginger sliced
Garlic minced
Tom yam pack ( lemongrass, galangal, chilli, kaffir lime leaves)
Fresh coconut milk.
Chinese rice wine
Chilli paste
Cracked pepper

Heat up wok, add oil and toss in ginger and garlic and fry. Add tom yam pack and fry till fragrant. Toss in clams, kept frying until it turns colour. Add Chinese rice wine and chilli paste then cover wok. When it boils pour coconut milk and let it simmer again with the lid on. Grind some cracked pepper and give it a final stir. Serve and mop up the gravy with rice or toast. Heavenly.

Tip: Buy clams on the day of cooking and you won't need to add salt or other seasonings. Instead you will taste the sweet and salty smell of sea. I also like using wok and big fire to cook for orgasmic "wok hei". Let me know how it goes! Good luck!!!
