School was awesome for both girls. This year kid #2's teachers actually sent home their expectations! No shit! Along with homework due dates for the trimester! Woohoo! She has 50 points worth of work due every week in her language class which she can mix and match from a list of activities worth between 5 and 25 points each. All of these are due each Friday, 50 is the minimum, 65 is the max, she has completed 30pts worth so far. Her math teacher sent home a parents' guide to the stuff they're doing this week, she will send a new one home each Monday. Her Science teacher sent home a request for a plant cutting due by Friday, each student will be growing a plant this trimester. No homework in band or PE, but I do have to send $20 tomorrow for her gym clothes. Dammit. Kid #1 had no homework today, but I get a daily report from her teacher just like last year, she is working toward being "off level" for preparation to integrate back into general ed classes. She is currently on level 4.12, when she completes level 5 she'll be "off level". Should be about a month and a half. We're hoping to integrate after the Christmas break.

In other news, I made the freaking bomb ass dinner tonight. No shit. Oh em gee, so full and yummy. I will provide the awesomeness that is the recipe for chicken enchiladas in cream sauce.

1 boneless skinless chicken breast
1/4 c chopped yellow onion
1 small can green chilis (really small, itty bitty even)
1 can 98% fat free cream of celery soup
1 can 98% fat free cream of chicken soup
1 8oz tub sour cream
2c 2% colby jack cheese (shredded)
8 tortilla shells

Preheat oven to 350. Cut chicken up into very small pieces and sautee in a little bit of butter or margarine (and spices to taste, I just used some basic no-salt all purpose seasoning) until cooked through, then add onions and half the chilis to the pan. Continue sauteeing until the onions are tender. Meanwhile mix soups, sour cream and remaining chilis in a saucepan over low heat. Add cheese and chicken mixture to each tortilla, roll and place in casserole dish. Cover with soup mixture, garnish with more cheese if you want it pretty. Bake at 350 for 30 minutes.

No shit, so damned yum. Each enchilada is about 400 calories, not too awful, but not exactly low cal, either. It helps to use the low fat soups and cheese and stuff. One is definitely enough for me. I have about 5 left in the fridge that I'm trying to figure out how to work into the next couple of days. The girls weren't big on them, but they don't like anything with flavor anyway. Their favorite food is Totino's 3 cheese pizza, for serious.
