southeast asian style spring rolls

One of my professors made this for us students at a dinner.

Ingredients:
extra-firm tofu, cut into strips
egg roll wrappers (we used the rice paper ones)
hoisin sauce
soy sauce
lettuce of some kind (bagged spring mixes are good)
cilantro
green onions
cooked rice noodles

Marinade the cut tofu with plain hoisin sauce. In the meantime, cut up the cilantro and green onions and cook the rice noodles. If using rice paper wrappers, soak them in water until they are soft. Place a strip of marinated tofu in each one, followed by lettuce, cilantro, green onions, and a few noodles. Wrap it and dip it in soy sauce if desired.
