Stuffed Peppers

My mom makes some pretty good stuffed peppers, which are very easy to make vegetarian or vegan. I just substitute the ground beef with Boca crumbles. It's tough to give an exact recipe, because I just do it to taste or until it looks right to me, but I figured I'd record it here for my own future reference.

Ingredients:
-several bell peppers (I always use green, but other colors would be good too)
-rice (I use brown)
-1 can of tomato soup
-1 package of Boca crumbles (the first time, I used 2 and it seemed to be way too much)
-some cumin, to taste

Cook the rice and tomato soup.
Meanwhile, blanch the peppers in lightly salted, boiling water for about 5 minutes so they're easier to fill.
Mix up the cooked rice and tomato soup (setting some aside) with the Boca crumbles. Season with salt, pepper, and cumin to taste. Stuff the peppers with this mixture and place in a slightly oiled baking pan. Top with remaining tomato soup, and bake until done.
