Bagel Lorraine
Two Large Eggs
1/8 Cup Swiss Cheese (Shredded)
1/8 Cup Cheddar Cheese
1/4 Teaspoon Minced Onions
1/2 Tablespoon Bacon Crumbles
1/2 Bagel (Hollowed Out so most of the insides is gone)
Scramble eggs, until still slightly runny. Add other ingredients until melted. Add to bagel and Garnish with extra cheese.
I make this with Egg Beaters, Bacon Crumbles for Salad. I love quiche but it is too rich for me, lol. I toasted the bagel too.
