Cupcakes

I made over a hundred mini-cupcakes this evening, in yellow cake and in chocolate (Devil's Food) cake. I think it was about 134, to be exact (I am counting the ugly ones that never made it to the end of production). The ones from the first couple batches look fabulous. They are perfectly frosted and sprinkled. The ones close to the end, when I decided it wasn't fun anymore...have haphazardly-applied frosting and the sprinkles? Well. I actually did POUR them on, thank you very much.

If I am ever a parent someday, remind me to not volunteer to make anything baking-related. In the beginning, I am all gung-ho about it. "YEAH!" I think, "I'm totally gonna be Susie Homemaker! Show 'em what I'm made of!!!" I have no idea why I think this, because...I don't make cupcakes from scratch. That's a giant waste of 3 hours making the perfect batter. No, no...I have to give all the credit to Betty. Betty Crocker, that is.

I think I had this conversation twice before. Once with my friend Judy...and the other time, via text message, with
Gloria. We had all agreed that baking is never as fulfilling as creating a meal. For Judy, I think her reasoning was pretty simple: "I like savory food, not really sweet." For Gloria...I believe she said there was no challenge. And when I say "baking", I'm referring to baking things like cookies, cakes, sweet dessert pies, etc. Not the meal-cooking type of baking.

If I am ever a parent someday, please remind me that I've made this statement: at the school bake sale, I'll be the mom who made bacon-wrapped Medjool dates stuffed with a mild Gorgonzola...not the mom who copped out and made the chocolate chip cookies from the ready-made dough in the refrigerated section of the supermarket.

Sure, I might be the mom who humiliates her kids because she brought hors d'oeuvres instead of brownies or what have you...but at least I'd have a sense of fulfillment. Haha.

Of course, I say this being a 30-year-old single woman. Who knows what will happen. I might end up being that soccer mom that drives the SUV, shuttling her spoiled kids around town.
