i was thinking about funnel cake all day today. i blame mrsquizzical. mmmmm. funnel cake.

so i searched for a gluten-free recipe, and found a universal one! \o/

1 1/4 cups flour
     (i used 3/4 cup sweet rice flour & 1/2 cup sorghum flour)
2 tablespoons brown sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 egg
2/3 cup milk (i used vanilla rice milk)

mix thoroughly and put in a quart size baggie (easier than pouring the batter through a funnel, i think). heat 2-3 tablespoons of coconut oil in a skillet on medium-low. cut a small hole in the corner of the baggie and squeeze batter into the hot oil (in whatever shape you want, however big you want it!) and cook until golden brown on that side (usually about 2 minutes) and then flip it over. cook for another couple of minutes and serve with cherry pie filling and/or powdered sugar on top! or whatever you like on top, really.

the coconut oil will get hotter the longer the pan sits on the stove, so you may find that you'll need to keep turning the heat down lower and lower.

here is a crappy camera phone picture of my half-eaten funnel cake, because i didn't think to take one when it was shiny and whole. oops.
