Tony B, David Morse, Laurel Lanes

Last night was amazing. Meeting Tony B was freaking surreal, and having him autograph my beat-up, dog-eared, kitchen-copy of Kitchen Confidential   was more than I could have asked for.  The lecture was of course, hilarious.  He's got a very cool way about him, and even after all the celebrity and travel...he's still very much a cook at heart.  It was nice to hear someone talk about issues in the restaurant business with unabashed honesty and to have the topic of Food Service and how it relates to the crap-tastic economy was a great addition too.  He talked about a return to simple, poor food and seriously folks, I almost wept.  We need so much more of that in the food biz these days; to get away from all the pomp and circumstance, the luxury ingredients, and the "Paris Hilton Cuts of Meat" (read: no fat and no depth) and go back to the good stuff...the food that actually needs talented hands to turn it into something great. Slow food, from earth to plate is around the bend and I couldn't image a better thing coming from such times of financial instability.  To hear from an idol that we need to return to simpler days, less protein, and old world technique made my little cook heart jump for joy.

Needless to say, I crossed that off of my 101 things, and count myself lucky to have been a part of it.  Once again Jaqs, thank you.

Other fun/ cool tidbit of the day:  On the way to said lecture, Jaqs and I literally walked right by David Morse.  Jaqs didn't believe me, but I knew that guy was an actor.  He's actually pretty sexy for an older Gent up close. HA!

Today should be interesting.  I'm heading out to Laurel Lanes shortly to try and sell them on hiring LVC and I as their freelance caterer.  This could mean very good things and some serious options if I do well, so wish me luck and send some good vibes.
