Ingredients
Batter
100 g butter
100 g light brown sugar
150 g gluten-free self-raising flour
1 egg
40 g cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon mixed spices or cinnamon
50 g dark chocolate or chocolate chips
Instructions
1) Preheat oven to 180 °C or gas mark 4. Line 2 baking trays with greaseproof baking paper.
2) Melt butter in the microwave. Mix together will all ingredients apart from the chocolate and mix with a hand mixer until well-combined.
3) Chop the chocolate in small pieces (not needed if you are using chocolate chips) and add to the batter. Mix again, this time with a spoon.
4) Spoon a tablespoon of the mixture on to a baking tray, repeat until you have used up all of the cookie batter. You do not have to shape them as they will melt and flat out in the oven anyway.
5) Bake for 15 minutes. When you remove them from the oven, they will still be soft, but once cooled, they will firm up a bit.
