Ingredients
Batter
140 g gluten-free self-raising flour
1 teaspoon baking powder
3 tablespoons cocoa powder
1 teaspoon mint extract
100 g light brown sugar
100 g softened butter
2 eggs
2 tablespoons milk
Decoration
50 g milk chocolate
20 g shredded, unsweetened coconut
Instructions
1) Pre-heat oven to 180 °C/gas mark 4. Line a rectangular baking tray with greaseproof baking paper.
2) In a bowl, mix together all batter ingredients until thoroughly combined.
3) Scrape mix into the baking tray and level the top. Bake for 15-20 minutes. Leave to cool. Cut into rectangular pieces.
4) For the decoration, melt the chocolate (stove or microwave). Cover the top of the cake pieces with chocolate. If you like, sprinkle some coconut on top of it. Leave for the chocolate to set.
