Real Simple Magazine: Apple and Grits Cake, liquor optional

I received this month's Real Simple magazine in the mail yesterday and I immediately decided I wanted to make this cake. I did not have grits on hand but I needed to head to the grocery store anyway. I used small gala apples. The taste is not overly sweet. Next time I make this I will definitely add raisins and possibly walnuts if I have any on hand. This makes a nice cake for tea or coffee after dinner.

Ingredients:
1/2 cup melted unsalted butter
1/2 cup all purpose flour
1/3 cup instant grits
3/4 tsp baking powder
1 tsp fine salt
2 large eggs
3/4 cups sugar
3 tbs of bourbon (I used spiced rum)
1 tsp of vanilla extract
4 apples peeled and chopped

Heat oven to 350 degrees F.
Butter an 8 inch springform pan
Whisk together the flour, grits, baking powder, and salt in 1 bowl, set aside
In another bowl, whisk the eggs until foamy, add sugar, liquor, and vanilla to combine
Whisk in flour mixture and butter in alternate additions.
Mix until just combined, fold in apples
Transfer batter to prepped pan, bake until toothpick comes out clean.
(I used a 6 inch springform pan and it took 75 minutes)

*Note for moderators: This took 20 days from my submission date to be posted. Is there any way to speed up this process? I love this group but I do dislike waiting to see all of the yummy things people have created. : )
