Tis the season for pumpkin, right? I found
this recipe and decided to play with it a bit:
Ingredients:
1/2 cup all purpose flour
1/4 cup whole wheat flour
1/2 heaping tsp baking powder
1/2 tsp salt
3 eggs
3/4 cup sugar
1 tsp vanilla extract
1/3 cup vegetable oil
1/3 cup light sour cream (or applesauce or Greek yogurt)
1/4 cup dark cocoa powder
1/2 cup pumpkin puree
3/4 tsp cinnamon
1/2 tsp pumpkin pie spice
Preheat oven to 350F.
In a bowl, combine flours, baking powder and salt. In separate bowl, mix oil, sour cream, vanilla and sugar. Beat in the eggs, one at a time. Combine wet and dry ingredients, mixing until just moistened. Divide the batters in half in separate bowls. In one, add the cocoa powder and stir to blend. In the other add the pumpkin and spices.
Grease 8x8 inch cake pan well. Alternate pouring the batters into the pan, starting with the chocolate. Swirl with fork/knife/chopstick:

Bake for 40-45 minutes, until the brownies begin to pull away from sides of the pan and a toothpick to the center comes out clean.

I'd use more spices in the pumpkin next time.
The original recipe does call for walnuts, but my stance on nuts in my baked goods remains steadfastly against. It also says to put the chocolate chips into the chocolate batter, but I like them on top, myself. The end result here is a recipe with half the sugar and fat and plenty of taste. I put it in the win pile.
