I'm going a bit cherry mad this July! In this recipe I used cherries that I pitted and froze. Often when cherries are in season, you tend to get a good deal. That of course means that I end up buying far more cherries than anyone in the house can possibly eat. I often pitt the excess cherries and freeze them. They will keep quite happily in the freezer for a couple of months. I often take them out the freezer and put them straight into the batter. And its not just cherries. I do the same with raspberries, blueberries etc.
Ingredients:
- 4oz Butter
- 4oz Caster Sugar
- 4oz Self Rising Flour(sieved)
- 2 Eggs
- 2oz Choc Chips
- 2oz Cherries
- 2tbp Vanilla extract
Method:
- Preheat oven to 180C
- Cream butter & sugar till light and fluffy.
- Add eggs, vanilla and beat.
- Add flour, choc chips, cherries and fold.
- Bake in loaf tin for 30-35 mins
- Leave to cool completely before cutting (i didn't!)
