I made this cupcake a couple of months ago. Originally I was going to make a lemon icing to go with the cupcake but the cupcakes didn’t quite make it to that stage lol. Note to self, Do Not leave cakes lying unattended, they tend to mysteriously disappear.
Ingredients:
- 4oz caster sugar
- 4oz self rising flour sieved
- 2 eggs
- Zest of 1 lemon
- 1oz choc chips
- 1/2tsp lemon extract
Method:
- Preheat oven to 180C.
- Cream butter and sugar till light and fluffy.
- Add eggs, lemon zest & extract and beat.
- Add flour, choc chips and fold.
- Portion the batter out equally into cupcake liners.
- Bake for 12-15 mins (skewer test).
- If you are going to frost the cupcakes, make sure you leave them to cool completely before icing them.
