I was very pleased to learn the theme for this month is honey. I've had my eye on this recipe for a long time and I've been waiting for the right moment to try it. I guess this is it!
It looks like a cake, but I think this it's probably more like a quickbread. It has a more bread like texture, chewier than a regular cake.
It uses honey and lemon as flavouring, and for some reason, together they make a very, almost spicy kind of taste.
I know it looks humble, but it tastes delicious and it's supereasy to make, so I would definitely recommend giving this a try.
You will need:
- 225 gr. plain flour
- 115 gr. caster sugar
- 115 gr. honey
- 150 ml hot water
- 1 tsp bicarbonate of soda
- zest of 1 lemon
And this is how you make it:
Preheat the oven to 150 degrees celcius. Grease and line a 450 gr/1lb loaf tin with baking paper.
In a large bowl mix the flour and sugar together. In a pan heat the honey and water until the honey is disolved. Add the bicarbonate of soda and lemon zest to the honey mixture. Then pour honey mixture over the dry ingredients and stir until everything is incorporated. Pour the batter into the loaf tin and bake for about 50-60 minutes.
