I love red velvet so much that it literally hurts my feelings that my boyfriend hates/ed it. One day, I went online to find a recipe for red velvet cookies, and found about a million variations, so I couldn't even compare them to see which one was better. I took a few that I liked and smashed them together to make my own recipe.
The good news? They're delicious.. AND boyfriend-approved!

Triple Chocolate Red Velvet Cookies
Ingredients
1 stick butter, room temperature
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla extract
1 tsp baking soda
1/4 tsp salt
2 Tbsp unsweetened cocoa powder
1 1/2 c. flour
1-2 Tbsp liquid red food coloring
1/2 c. white chocolate chips
1/4 cup milk chocolate chips
1/4 cup dark chocolate chips
Directions
Preheat oven to 350°F.
Combine all ingredients except for food coloring and chocolate chips. Mix in food coloring until desired color is reached. Stir in all chocolate chips.
Drop by rounded teaspoon onto a greased cookie sheet. Bake for 9 minutes. Allow cookies to cool for a few minutes on cookie sheets, then transfer to a wire rack to cool completely.
Yields 2 dozen cookies.
No joke... these babies are RED!
