Wasa Crackers, Tofu, Mushrooms and Black Olives Lasagna
(Serves 6 to 8)
11-12 Wasa Hearty Grain Crackers (

1 can (15 oz) tomato sauce
1 can (15 oz) stewed tomatoes
1 can mushrooms, chopped
1 can black olives, chopped
2 blocks tofu, crumbled and drained
4 cloves garlic, chopped
1/2 onion, finely chopped
2 tsp parsley
2 tsp thyme
2 tsp oregano
1/4 tsp garlic salt (

1/4 tsp white pepper
1/2 tsp ground up red pepper flakes (take red pepper flakes, put in coffee or spice grinder or blender and grind it up) (

a good glug of olive oil -- enough to cover the bottom of a 1 quart sauce pan
6 to 7 slices of muensteur or monterey jack cheese, grated (

3/4 cup grated parmesan cheese
generous pinch of sugar (1/4 tsp)
1/4 cup water
Put a sauce pan on the stove over medium heat. Add enough olive oil to cover the bottom of the pan. Add chopped onion, ground up red pepper flakes, garlic salt, white pepper and saute until onions are translucent (5 to 6 minutes). Add garlic, chopped mushrooms, black olives, oregano, thyme and dried parsley. Saute for another 7 to 8 minutes. Add crumbled and drained tofu. Saute for 5 minutes. Add tomato sauce and stewed tomatoes. Put 1/4 cup water in empty tomato sauce can, swirl it around and add liquid to saute pan. Add generous pinch of sugar. Mix to combine. Cook on low-medium heat for 30 to 40 minutes, stirring occasionally so sauce will not burn on bottom.
Preheat oven 400 F/ 200 C / Gas Mark 6.
Cut 4 of Wasa Crackers in half lengthwise.
In a 11 x 7 inch / 28 x 18 cm rectangular baking pan, place enough of your cooked tomato sauce (liquid only) to cover the bottom of the pan. Add one layer of Wasa Crackers to bottom (usually, 4 whole, 2 half sliced to fill the sides/ empty spaces. Add a layer of tomato sauce, then a layer of grated muenster, then 1/3 of grated parmesan. Add another layer of Wasa Crackers, then the rest of the tomato sauce, grated muenster and 1/3 of parmesan. Spoon remaining sauce over the whole thing and any remaining muenster cheese and parmesan cheese.
Cover with foil and bake for 40 minutes. Uncover foil and cook an additional 10 minutes or until cheese on top melts and top is a lovely golden brown.
Serve with salad of fresh sliced tomatoes sprinkled with a little coarse salt and a nice grating of black pepper.
