Diabetic Cakes
Hi everyone,
My dad has diabetes so I have been looking for some diabetic friendly cake recipes that he can eat, in moderation.
I know he shouldn't really be eating cake at all, but I'm sure some must be less bad for diabetics than others...
I've tried a few recipes but most come out dry and rock hard and don't rise as well as normal cakes.
I found a good carrot cake recipe on www.diabeticsoul.com which I made yesterday as a birthday cake and although it doesn't have any icing as that would be far too sweet it works really well with some fresh fruit.
Can anyone recommend any other good diabetic cakes?
