Phew, it's been a while and I've definitely missed seeing all the delish posts flying by! Introducing melt-in-your-mouth, deliciously sinful (and safe!) cookie dough-topped fudgy brownies.

Notes: If you love chocolate and you LOVE eating raw cookie dough, this is THE recipe for you. These were literally inhaled: I made them for Dickens' bicentennial birthday last Tuesday and they were gone in a jiffy. And best of all, they are egg-free and perfectly safe (although definitely not sinless)!
Cookie Dough-Topped Fudgy Brownies
Ingredients
- Brownies:
- 1/2 cup butter, melted
- 1-1/2 cups white sugar
- 1-1/2 teaspoons vanilla extract
- 2 eggs
- 3/4 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 1/2 cup semisweet chocolate chips or chunks (I prefer bigger chunks for more fudginess)
Cookie Dough:
3/4 cup butter, at room temperature
3/4 cup light brown sugar, packed
3/4 cup granulated white sugar
3 Tablespoons milk
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 1/2 cups mini chocolate chips
Directions
To Make Brownies:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x9 baking dish.
- Combine the melted butter, sugar, and vanilla in a large bowl. Beat in the eggs, one at a time, mixing well after each, until thoroughly blended.
- Sift together the flour, cocoa powder, and salt. Gradually stir the flour mixture into the chocolate mixture until blended. Stir in the chocolate morsels. Spread the batter evenly into the prepared baking dish.
- Bake in preheated oven until an inserted toothpick comes out clean, 25 to 35 minutes. Remove, and cool pan on wire rack before cutting.
To Make Cookie Dough:
1. In a medium bowl, beat together butter and sugars. Mix in milk and vanilla. Mix in flour just until combined, then stir in chocolate chips.
To Assemble:
Gently spread cookie dough over cooled brownies in pan. Refrigerate or freeze until quite firm. Cut into small squares and drizzle individually with heated chocolate, if desired (1/2 cup semisweet chips with 1 tsp butter, melted in microwave).
