Lamb shanks

I hesitate in calling this one a "pie", because that's not really the point. It's mainly an excuse to eat puff pastry with one of my favourite meals: lamb shanks. I love puff pastry. I would eat it as a meal by itself. Combined with shanks it was perfect for the winter-ey weather we've been having lately. Mind you, you need quite the appetite to down this - only one person managed to eat the lot.





The presentation isn't all that, because it was a total rush job. Trust mum to decide to clean out the kitchen cupboards rendering the kitchen useless on the day I was planning shanks!



I used this recipe for my lamb shanks. Pay no mind to the 2 negative reviews on the first page. It nearly turned me off, but as I surfed through the comments I found it was just 2 bad peas in the pod. Maybe they just botched the recipe. The gravy is full of flavour and doesn't require additions, though it can always be tweaked to your preference.

While the shanks were in their last stages, I made up some creamy mashed potato and organised the veggies. I used broccoli, cauliflower, carrots, peas and corn. Could easily of added more, but I didn't want to overdo it.

I divided the potato between 4 large dishes, put a shank in each, filled with veggies, topped with sauce and covered with pastry. I was going to do two shanks each, leave one on the bone and break the other down to combine with the veggies in the gravy. However, everywhere was sold out and I was lucky just to be able to find 4.

I popped it back in the oven at 200°C for 20 minutes and ta da. A dinner to die for.
