Scrummy Banana Muffins

I made these banana muffins today and thought I'd share:


Ingredients: 
-1.5 cups spelt flour.
-1/4 cup dessicated coconut.
-3 tsp baking soda.
-1/2 tsp cinnamon.
-pinch salt.
-1/2 cup coconut oil, melted.
-1/2 cup maple/agave syrup.
-1/3 cup apple juice/water/soya milk.
-1 tsp cider vinegar.
-3-4 super-ripe bananas.
-1/2 cup chopped pecans/walnuts/choc chips (optional).

Method:
Preheat oven to 180 degrees celsius and grease muffin tins. In a small bowl, mix flour, dessicated coconut, baking soda, cinnamon and salt. in a larger bowl, whisk together melted coconut oil, maple/agave syrup, milk/juice/water and cider vinegar. Fold dry ingredients into wet until just mixed. Let ingredients cool. Gently fold in mashed bananas and pecans/walnuts/choc chips. Bake for 25-30 minutes. Cool on wire rack.
