My dog Milly's 2nd birthday was yesterday, and I made these cupcakes for the celebration. I've had this recipe saved for a long time, but this was my first time using it. I'm sorry that I don't have any pictures, but they did end up looking more like a muffin than a cupcake :) The dogs didn't really care what they looked like though!
Ingredients:
1 egg
1/4 cup peanut butter
1/4 cup vegetable oil
1 teaspoon vanilla extract
1/3 cup honey
1 cup shredded carrots
1 cup white flour
1 teaspoon baking soda
Foil baking cups (I used Reynolds brand and they were right next to the paper muffin cups at the grocey store. You don't need a muffin pan - you just place them right on a cookie sheet)
Directions:
-Preheat oven to 350 degrees F
-Combine the egg, peanut butter, oil, vanilla, and honey in a large bowl. Mix well.
-Stir in the carrots
-In a bowl, mix together the flour and baking soda & then fold them into the carrot mixture.
-Spoon the batter into the baking cups
-Bake for 20-25 minutes
Makes 6 jumbo muffins.
I didn't know how to make a "pretty" frosting, so I just put some extra peanut butter on top.
