lowfat strawberry muffins

I finally have a working digital camera again so you'll be graced with pictures of food from me more often~

I made strawberry muffins yesterday, and they are still perfect today. Moist, sweet, almost taste like strawberry pancakes but not quite. The perfect breakfast food, for me :)










Recipe:
Ingredients:
• 1/2 cup unsweetened apple sauce
• 1/2 cup skim or 1% milk
• 1 egg white
• 1/2 tsp. salt
• 2 tsp baking powder
• 1/2 cup sugar
• 1 3/4 cups flour
• 1 cup chopped strawberries

Directions:
1. Preheat oven to 375F. Line muffin tin with papers.

2. In a small bowl, combine applesauce, milk, and egg white. Whisk lightly.

3. In a large bowl, mix flour, salt, baking powder, and sugar. Toss in chopped strawberries and stir to coat. Pour in milk mixture and stir together just until completely combined.

4. Fill muffin cups. Top with strawberry halves if desired. Bake for 25-30 minutes. Cool for 10 minutes before removing from pan.

The recipe yielded twelve, but they're popular so I only have seven left.
