Rum Cherry Balls or Cherry Ripe Balls.. whatever

1 cup of desiccated coconut
1 pack of Arnotts Milk Arrowroot biscuits (or in the USA something like Graham Crackers I think?)
1 tin of Condensed Milk
200g glace cherries, chopped small
2 tablespoons of good quality cocoa powder (I use Cadbury's)
1/4 cup of your choice of dark rum (in aus we use Bundaberg Rum)
extra coconut or chocolate sprinkles for rolling. (you could even dip them in chocolate if you REALLY wanted.. i'd reccomend something dark)

METHOD

Soak the Cherries in the rum over night.. at least 24 hours, longer if you want.
Smash the biscuits until they're like large crumbs.
Mix in the coconut and cocoa powder till combined.
Add in the rum soaked cherries and the tin of milk, stir till combined.
Using a teaspoon, make small balls and rub in the extra coconut/sprinkles.
Sit on grease proof paper and chill for at least 30 - 40 minutes, over night is even better because the flavors mix and deepen.

N.B if dipping in chocolate, i'd suggest freezing over night and dipping the next day.

Dont eat too many at once.. they're HIGHLY addictive...

Normally, at christmas we have them without the cherries, I just like cherries lol
