I love cooking. Have I mentioned that? Because I do! I really love cooking - and I love the eating too *grins* But taking some basic ingredients and putting them together and making food is just an awesome feeling... Yes, I'm a dork. I'm aware of this.
Today I had pork for the first time in... I can't remember the last time I had pork, actually, except for sausages and bacon and gammon.

Serves: 4
Ingredients
600g pork fillet
1 tbsp olive oil
2 eating apple, cored and cut into eighths
1 clove garlic, crushed
2 tbsp maple syrup
1 tbsp red wine vinegar
2 tbsp wholegrain mustard
Method
Cut the pork into 3cm thick slices. Heat the oil in a large, non-stick frying pan, add the pork, then fry on both sides until lightly browned, about 5 mins in total. Lift out of pan and set aside. Add apples to the pan, then cook for 3-4 mins until starting to soften.
Stir in the garlic, maple syrup, vinegar and 3 tbsp water, bring to the boil, then return the meat to the pan along with any juices. Simmer for a few more mins, stirring until the pork is cooked through and the sauce is thick and sticky. Stir in the wholegrain mustard, then serve.
Thoughts
I served it with onion rice and yes, it was rather nommy. I found it a little dry so next time I'll make more of the sauce but oh... so good. The sauce was just sweet enough to nicely complement the pork, but not sickly. And it was lovely and sticky.
