Talk about one of the main signs that I'm feeling like myself again - both mentally and physically - is that I'm cooking again. My leg is healing enough that I'm able to stand in front of the cooker, and my concentration is long enough that I'm not gonna confuse myself part way through!
Tonight's new recipe was Speedy Moroccan Meatballs
Prep: 5 mins
Cook: 15 mins
Serves: 4
Ingredients
1 tbsp olive oil
350g pack ready-made beef or chicken meatballs (approx 16)
1 large onion, sliced
100g dried apricots, halved
1 small cinnamon stick
400g tin chopped tomatoes with garlic
25g toasted flaked almonds
handful coriander, roughly chopped
Method
Heat the oil in a large deep frying pan, then fry the meatballs for 10 mins, turning occasionally until cooked through. Scoop out of the pan and set aside, then cook the onion for 5 mins, until softened.
Add the dried apricots, cinnamon stick, tomatoes and half a can of water to the pan, then bring to the boil and simmer for 10 mins. Remove the cinnamon stick. Return the meatballs to the pan and coat well with the tomato sauce. Serve sprinkled with the almonds and coriander.
My thoughts
I do always like it when I don't have to take out/replace any ingredients, makes me a happy wee llama. I did discover though that I didn't have almonds, and what I thought in my cupboard was almonds was actually sesame seeds. Slightly different.
I had this with some couscous, just done in boiling water with some chopped onion in it. It was absolutely delicious. All the mixture of the flavours, the apricot and the tomato and the cinnamon with the beef was mouthwatering. I think the only difference I'll make next time is to cut the apricots a little smaller. But there will definitely be a next time
