Speedy Chicken Noodle Soup

serves 2

Ingredients
500ml chicken stock
1 small carrot, diced
2 spring onions, sliced
handful of beansprouts
shredded cooked chicken breast
100g cooked noodles
splash of soy sauce, to taste

Method
Bring chicken stock to the simmer, add carrot and cook until tender
Add spring onions, beansprouts, chicken and noodles. Heat through and season with soy sauce to taste

They weren't joking when they said it was speedy! It was very filling and nice but was a peculiar consistency... it was just like a wet stirfry so I wouldn't make it again.
