Pineapple Rice

Ingredients
300g (10oz) brown rice
900ml (1.5 pint) vegetable stock
1 onion, chopped
1/2 tsp turmeric
225g (8oz) fresh pineapple (or use 225g/8oz can chopped pineapple in juice, drained)
60g (2oz) currants

Method
Place the rice, stock, onion and turmeric in a large saucepan.
Bring to the boil and simmer for 20-25 minutes until the rice is tender and the liquid has been absorbed
Add the pineapple and currants, heat through before serving

Now, I tend to have gammon with this so I chop the gammon into pieces, panfry it. Then add it to the rice when I throw in the pineapple and currants.
