so not much in the update world so I'd thought of updating with
what I love doing most sometimes.....cooking, well in this case baking....
here are the pics.....uhm evidence....



the recipes are as follows

mo's apple pie...
6 medium apples( mix of cortland , mac's , and spy)
25g sugar twin
1/4 cup  apple sauce
2 teaspoon vanilla
2 tablespoons water
2 tablespoons corn syrup
2 tablespoons cinnamon
2 tablespoons becel...unmelted
2 tablespoons molasses
2 pie pastry shells
cut and core the apples into bite size pieces
add the rest of the ingredients and mix by hand till all is incorporated
pour into an un baked pie pastry shell cover with another pastry shell
pinch them together using a fork and some water....make holes in the top of the pastry with a fork....
bake  in a pre heated 375 degree oven for 45 to 55 minutes until golden brown
in the final 10 minutes baste with orange juice or water and sprinkle with sugar
REMOVE FROM OVEN AND LET STAND FOR 2 HOURS OR MORE....ENJOY!!!


moving on.....

mo's very own pumpkin tarts....
2eggs
400 ml pure pumpkin puree
25g sugar twin
2 teaspoon pumpkin spice
pinch salt
1teaspoon vanilla
125 ml milk
2 tablespoons becel
2 tablespoons molasses
2 tablespoons corn syrup
beat eggs and puree together until smooth then add remaining ingredients
pour into 12 tart pastry shells or one pie pastry shell, bake in a pre heated 375 degree oven for 25-35 minutes til filling begins to dry and crack....remove from oven gently press down filling with a fork to make uniform let stand 30 minutes
ENJOY!!!!!!!!


and finally.....

mo's becel pecan tarts.....
1/4 cup  brown sugar twin
1/2 cup corn syrup
1 egg
2 tablespoons melted becel margarine
1 teaspoon vanilla
1 teaspoon vinegar
whisk all ingredients together pour into 10?? yes ten, pastry tart shells set aside....
we must now toast 1/2 cup of pecans, this can be done quickly in the microwave,
place the pecans in a microwave safe dish or measuring cup add some becel and some corn syrup or even maple syrup if you desire and microwave for 2 minutes stiring once while cooking...when done stir again and put a few pecans in each tart shell....
tarts are now ready to bake in a pre heated 375 degree oven for 20-25 minutes until golden brown and bubbly....let stand for an hour or until cool....ENJOY!!!!!!


we made 10 pecan tarts plus two open face apple tarts....

all the above are for thanksgiving monday
they look and smell great .... and oh yes they are just yummy!!!!!!!!!!!!!!!!!
I used the frozen pie pastry shells but you can make your own.....
the first two are my recipes
the third is a variation of a becel recipe...
I hope you guys try them they are all low in saturated fat and sugar!!!!
and oh yes molasses and corn syrup or maple syrup are all interchangable
