1 small box of cherry jello
1 cup powdered/icing sugar
1 cup softened margarine or butter
2 1/4 cups flour
3 Tlbsp very hot water
2 cups powdered/icing sugar
1 tsp vanilla
* Reserve 1 Tblsp of jello powder from one small box of cherry jello. Set aside in a medium bowl.
* Mix the rest of the jello powder with icing sugar, softened butter/margarine, and flour. (I found it easiest to mix with my hands, and I added a few sprinkles of water because it seemed rather dry and crumbly.)
* shape into 1" balls, place on non-stick cookie sheet. Bake for 8-10 minutes, until the bottoms are lightly browned.
* Cool completely and ice wtih the glaze
Glaze: dissolve the reserved 1 Tblsp of jello powder in 3 Tblsp of very hot water, let stand for 5 minutes, stirring to dissolve. Stir in icing sugar and vanilla. (I used a spoon to 'pour' the icing on top of the cookies, and I 'dipped' some of them. The icing will dry and set in a short amount of time, so work fast and don't let the icing sit before using it.)
I would assume that other flavors of jello would be good too, as long as the box is the same size - orange, strawberry, lemon.....yum!
