Other infuriating things

Sorry I'm being so negative right now, but, sometimes it just happens.

So: just about every day lunch is catered at my parents' office. About 98% of the time there are leftovers. Some days there are more leftovers than others, but odds are that if a big salad consisting of lettuce and more lettuce and maybe some chopped tomatoes was brought along with a whole bunch of other things, the salad will be left at the end of the day. Aggravatingly, a lot of these leftovers get thrown out. Just plain stuck in the garbage. Once a bowl of soup in a container I brought from home was put in the trash, but that's a different issue.

So, every time good food gets thrown out I get really angry. Am I going to eat a big salad consisting of just lettuce or a big tin of rice? No. Do I want it thrown out? NO.

I don't know what to do about this problem. I can't take home food I'm not going to eat, and it's really awful for everyone involved if the food just gets thrown out. Sometimes we leave the food out for the cleaning crew but since they come after everyone has left I have no way of knowing if they know that the food on the counter is being left for them to take home and enjoy or if they figure we were lazy and didn't throw it away ourselves.

My ideal is that there would be an organization that would come and take all the leftover food. That at 2 pm every day any leftovers get taken by a company that will give the food to a needy family or to a homeless shelter. I thought I've heard of such organizations before and I tried to research it before I went to NZ, but am simply unsure of where to start.

I've tried to encourage people at the office to take home extra food or to eat it on the rare days when there are no lunches, but that usually fails.

Bottom line, I need help. I can't let this food just go to waste. It aggravates me, upsets me, saps a lot of energy and leaves a lot of guilt about people who don't have enough food even in our area let alone in the world.

I need practical suggestions on what I can cook with today's two tall yogurt containers full of grilled bell peppers and onions as well as what to make with a big bowl of sour cream(oh, and to just make things worse, people will throw something out just because they didn't look hard enough, for instance if guacomole is arranged on leaves of lettuce no one thinks to eat the lettuce or pick it up. They just decide it's all gone and toss it!) and if anyone has heard of any sort of organizations that can benefit from this ridiculous amount of over-ordering.
