Ok! Culinarily talented lj'ers, I need help!!!!

Tomorrow, I'm going, at very short notice, to a party with neil's lab mates. I need a dish!! Salads, meat, and desserts have been thoroughly covered. Also, one of the attendees has a severe milk allergy (allergy, not lactose intolerance) - so I'm looking for something dairy free.

i sometimes do sushi. no really.. if you have a rice cooker the only effort you need to put into it is chop up a veggie or two and roll it all up. then viola! vegetable rolls for all! if you have some leftover soy sauce packets from some takeout you can open em up and put them in a side bowl and youre good to go!

if sushi wont really fit with the rest of the menu you can make some hummus. i found a quick recipe here - http://vegweb.com/index.php?topic=15297.0

You could do a stuffed mushroom type thing.. Donna does this little dish with small mushroom caps, fills them with a garlic butter, but you cant use dairy...

Ok, well this is my favorite go to dish.

Make a 16 oz box of penne pasta.
Chop into strips one red, one orange, one yellow and one green bell pepper, cook them till they are just starting to soften with garlic, onions and olive oil.
Dice into small chunks mozzarella cheese. About 8 oz.
Mix the cheese and peppers into the noodles as SOON as you drain them.
Pour some more olive oil and salt and pepper.
Mix it all up till the cheese melts and there you go.

Though it is not dairy free, but it is amazing!
