Batch cooking

Spent most of Monday cooking and freezing food to leave for Thaniel while I go away on my long awaited sewing retreat this weekend. Had every burner on the stove going at once, three of them with sautes. Talk about multi-tasking! I'm continuing today and Wednesday by cooking extra at each meal to freeze. I also got to make extensive use of my nifty new Pampered Chef tools, especially the santoku knife, serrated peeler and handi-chopper thing (I forget the name). Oh, and the measured glass prep bowls with lids, which were great when I had to put away everything I had chopped to take care of the baby and come back to cooking later. Those bowls do double duty for re-heating his frozen dinners, too. Final tally:

Monday:
corn on the cob
creamy chicken w/ vegetables
butternut squash & tomato pasta
vegetable pasta sauce
chopped veggies and put in crock pot for the next day

Tuesday:
Oatmeal w/ apricots and pear
Beef stew (from crock pot prepared yesterday)

Tomorrow:
Flounder w/ orange sauce
And if I have time, cook pasta and brown ground turkey to go with the pasta sauces

It sure seemed like a lot more when I was cooking! Thaniel was extremely cooperative Monday by keeping himself amused during the most hands-on cooking parts. I had to make up for it today by giving him a three-hour block of one-on-one attention! I'm wiped out. Hope I have time to pack tomorrow...
