Grrr. I was about to finish a post, and then my laptop shut down without warning. So that entry is lost, unless I retype it. Well, the gist was....
I went to an auction last night and got an "anniversary package" including a stay in a hotel downtown, some wine, a restaurant gift card, and some crystal glasses, decorative dishes, candle holders. Got to bed at 1 am
When I got up this morning at 11:30 (I've been sleeping more recently), I had some OJ, which is giving me heart burn, and another quarter of the bread pudding I made the other day. I'm out of milk, bread, cereal, fresh fruits and veggies...time to go shopping again. How'd I do on that meal plan from a couple weeks ago? Things I made/ate are bolded:
Hacienda potato (baked potato with taco toppings and fat free refried beans)
Healthy Choice meals (5)
Omelette with spinach, tomato, onion, mushroom, cheese
Chicken with mashed potatoes and broccoli
Spaghetti and meat sauce
Minestrone with turkey sandwich
White Chicken Chili
Tilapia with Cucumber Salad and couscous
Sicilian pasta
So I guess I can make the other things this week. I was also thinking of making three-bean salad.
Simplyrecipes.com has a similar recipe to the one I make. I may use 1/2 t. dried basil and/or garlic powder rather than rosemary and parsley, and I use carrots instead of celery (or 1/4 cup chopped green pepper, which many other recipes have), green beans instead of cannelini, and I prefer balsamic vinegar. You can also just whisk the dressing first in one large bowl, then add the veggies to it, so you're only using one bowl. It's a delicious, healthy, inexpensive salad, and that's why I love it.
