I love spaghetti squash!  It was the only way my dad could get me to eat squash when I was a kid.  It works great as the filling for spaghetti pie, and I've heard it tastes great as "pasta", but whenever I cook it, I can't get the strings to stay long enough for that.  I find it works best as a base for casseroles!  So, here are a couple I've tried ( Read more... )
