So, the big Halloween party at my gym is tomorrow night. One thing I love about all the celebrations we do there is that everyone (members and instructors/employees alike) brings the food; like a pot luck. That way, there's a ton of variety, and it doesn't cost a ton of money. I've made my apple squares (
aristaslab.livejournal.com/2089.html) and Carrot Cookies. I was a bit skeptical about these cookies, especially since they didn't come out visually like I thought they would, but I have to say, after tasting them, that they are AMAZING! Marjorie Standish, you are my hero.
Carrot Cookies with Orange Icing
Ingredients:
3/4 C Shortening (I find Crisco Sticks to be awesome...so much less mess....)
1 tsp salt
1/2 tsp vanilla
3/4 C sugar (I messed up and used a whole cup...still awesome)
1 egg
2 C sifted flour
2 tsp baking powder
3/4 C cooked, mashed carrots
Directions:
Cream shortening, salt, and vanilla. The large amount of salt is used since none is added to the carrots. Add sugar, gradually. Add egg and beat until light and fluffy. Sift flour and baking powder together. Pare and cook carrots; enough to make 3/4 C mashed (about 3 medium sized carrots; roughly 2 C raw...I steamed mine). Fold in mashed carrots. Drop by spoonfuls onto greased cookie sheet. Bake at 350 degrees for 10-12 minutes.
Makes about 40 cookies.
When the cookies are still warm, frost with the following:
Orange Icing
Ingredients:
1 T margarine (I always use butter!)
1 1/2 T orange juice (squeeze it fresh!)
1 T orange zest
1/2 tsp almond extract
Confectioner's sugar (enough to spread the icing easily)
Directions:
Mix ingredients together until creamy and frost cookies. Icing will harden as cookies cool.

I have to say; these cookies came out to be absolutely lovely. I almost don't want to bring them to the party...but it's not like I can't make more!
As a funny side note...I've made the apple squares so many times, my book opens right up to that page!
