Language course and GRE questions

I will be applying this year for art history programs, mostly Phd programs, but a few Masters here and there.  I would like to focus on Medieval art, and my art history professor told me that when I get to grad school, I will be taking some reading comprehension courses in languages like German and Latin.  I go to a very, very small liberal arts college.  The education I'm getting is good, but there are some academic areas that are lacking due to various factors, such as foreign languages.  None have been offered in the entire time I've attended the school, but my professor said that any foreign language courses that would be offered here would be speaking comprehension, and it's more important for me to learn reading comprehension.

I will be graduating in December, so that will give me extra time to earn some money, and possibly take a German reading comprehension course.  My professor found me this online course at the University of Wisconsin-Madison.  I was thinking about enrolling now-ish, since I can take a year to finish the course, and while I certainly won't need that long, if I enroll now I make myself available to get some of the work done during my last semester whenever I have the chance.  However, the price is not cheap.  Though it's typical for a college course, it's a class I don't need to graduate and therefore I don't want to make the financial committment until I've heard a few more opinions.  If the schools I'm applying to know that I'm taking the course, even though many of them are saying it's not necessary to have taken it ahead of time, will it boost my application?  And is there another similar course that you would recommend?  I go to school in New Hampshire but when I graduate I will be moving back home to New York state, so it seems an online course would be my best choice.

Also, a quick question.  If I take the GRE's in early October, about how long will it take for me to get my scores?  Will that be enough time to submit them for December applications?
