1. start studying for the GRE- maybe take a practice test to know where you stand right now, and see if you might need to enroll in a GRE class this summer or something. The earlier you start studying for those the better....no need to go crazy right now, but you might want to start reviewing vocab a few times a week, etc.
2. contact your profs and let them know you are going to apply for phd programs. Do you have previous research experience? If not, maybe ask one of those profs if there is any project they have that you might work on part time for free to get some research experience- they will both give you a better letter, and it will increase your chances of getting into grad school. Definitely around now (or maybe in a month or so when the semester is a little less busy) try and set up meetings with them to talk about your prospects, what prorgams they think would be a good match for you, etc.

all the other stuff can come later. Maybe write a very rough draft of your SOP at some point...i ended up sending mine out to LOR writers and getting them to give me feedback and doing major edits of that like 6 times the year before i applied, but you don't necessarily need to do that right this second.
so basically the big things you should be doing right now is a) trying to get research if you don't have it yet b) starting to review stuff a little bit for the GREs c) researching schools and deciding where you want to go
