Food! Glorious food! And birdies.
We had birdie neighbors! A pair of cardinals. Evidently frugal cardinals. They abandoned their nest so I guess the market is just too high in the birdie community and they had to relocate.
I made a really fantastically delicious dinner tonight. On the fly. The best kind, I say.
I got over my fear of raw chicken and cooked a whole fryer chicken a few weeks ago. Tonight I thawed out some of the meat from that chicken, sauteed some zucchini, red onion, and garlic, threw in the chicken with the veggies and doused it all with some lime juice. While that was smelling tasty, I made some garlic bread (and yes, the bread was homemade) and roasted potatoes.
Ok, well, the potatoes weren't really all mine. I had one of those Green Giant Steam Fresh boxes way back in the freezer and figured I ought to use it. Except, ha ha....We stopped using our microwave a while ago and the according to the box these were microwave only roasted potatoes. So....I took them out of the bag and put them in a pan and turned up the heat and hoped it'd work. It mostly did! They were a little drier than I'd like, but not terrible. And while not the healthiest (due to all the extra crap in the mix), it's better than cooking it in the microwave.
All in all, a very satisfying meal. I saved a little to mash up for Isabel's lunch tomorrow. She likes everything! Next time maybe I'll add some soy sauce.
And now it's time for ice cream!! Breyer's Mint Chocolate Chip...mmmm....I wish Papa Clyde's sold their ice cream in take home containers.
