My problem right now is that it's hard for me to eat during the day because the little one doesn't let me take the time to prepare the food and eat it. So I wait until my husband gets home, and then it's already late, but I'm super-hungry, and eat too much.
Make it the night or weekend before. I know it doesn't feel like there's time, but you can have a great salad if you prepped all the parts the night before and just have to dump in a Tupperware and toss. I eat it right from there. Tossing in Tupperware uses less dressing and coats more evenly. Sometimes I'll microwave something. My lunch never takes more than two minutes prep when I'm home.
