Baked Eggs

My friend E makes a very lazy version of this as hangover food, for that point in the day when everyone's surfaced and gotten hungry, but he's really not with it enough to make proper food - tear up some ham, put it in a ramekin, break an egg in, add some cream and bake in the oven for 10 mins.

I found a slightly more elaborate version of this in a recipe book that hieroglyphe lent me, and thought I'd try it for old times' sake. I think it would work well without the bacon, also probably with spinach, mushrooms or any other vegetable that goes with cream. Makes a good (and stupidly easy) light dinner, breakfast or lunch.

4 eggs
2 small leeks
2 rashers of bacon
small pot of cream
fresh crusty bread

Heat the oven to Gas 5 or so and put the kettle on.
Chop the leeks and bacon, then fry the bacon in a butter/olive oil mix till crispy. Take out the pan and add the leeks, cooking on a medium heat till they're really melty. Put the bacon back in, and then add half the tub of cream, cooking down for a few more minutes until the cream thickens. Season with salt, pepper and a bit of nutmeg.

Spoon this into four ramekins (those little round ovenproof dishes), or perhaps a small baking dish. Crack the eggs on top, then pour the rest of the cream over the eggs. If you're using ramekins, fill a medium sized baking dish with a couple of inches of boiling water and then put the ramekins into the water. Chuck the whole lot in the oven. Cook for 10-15 mins, keeping a close eye on things, until the eggs are set to your liking. Serve with the bread, which you might have also warmed in the oven. Yum!
